The weather in Louisiana is crazy...I mean c-r-a-z-y. One day it can be 70 degrees with us wearing shorts and flip flops then the next day will be 40 degrees with jackets and gloves! It's extremely common to go from using the air conditioner to the heater in the same day as well.
Typically during the colder months we will keep our thermostats around 69-70 degrees so there won't be much of a chill in the house and also our gas bill won't skyrocket. This morning when we got up it was freeeeezing in the house so I bumped the thermostat up a few degrees and kept it like that for most of the day. I figured since it was so cold in the house that it must be cold outside too and that would make perfect weather for chili!!
Well I finally went outside about 3 pm and found that it definitely was not cold outside. In fact, it was pretty warm! By this time though I had already planned for the chili...so chili it was!
I make my chili semi-homemade...I still use one of those little chili seasoning packets. I've tried mixing my own seasonings but haven't been able to get it like I want it. Oh well...maybe one day!
Anyways...I planned on taking pictures as I cooked tonight then I forgot...so you will have to use your imagination...not that chili is rocket science though....
I'm not exactly sure of the amount of servings this produces but I'm pretty sure everyone at least got 2nd bowls...if not more...we have 2 adults, 4 kids that are between ages of 6-11, and 2 under 4 years old.
Ingredients
2 pounds ground beef
1 packet chili seasoning (or equiv. of homemade)
1 can dark kidney beans
1 can Ro-Tel (diced tomatoes with green chilies)
1 (8oz) can tomato sauce
1 can water
*Brown ground beef in a skillet until cooked through. Drain (you can also rinse the meat to get off any excess grease) and add back to pan.
*Add chili seasoning, kidney beans, Ro-Tel, tomato sauce and water to pan with ground beef. Stir well.
*Simmer over a med-low heat for 20-30 minutes.
Serve with: rice, corn bread, corn chips or crackers (or all...) We also like to add in cheese and ketchup!
(You can boil your ground beef also but it will give it a different texture.I like it...some do not...it's worth a try especially if you need to cook large amounts of ground beef.)
Even though it wasn't cold today, this chili was still pretty great!!
The best part about supper in our house is spending it around the table with our kids talking!
